Food and dining in Hakone allows you to experience authentic Japanese cuisine with fusion food, local colour and food specialities that you can only find in regional restaurants here. The signature delicacy of this region is kuro tamago, or black eggs. It's made by boiling eggs in 80° C spring water for an hour, then moving them to 100° C water for 15 minutes. The exposure to volcanic gas turns them black. The staple of the local diet is soba, or thin buckwheat noodles made with spring water. Other dishes to try include Hakone tofu, Japanese yams and Wakasagi smelt, a local fried fish.
